Aubrac, in the pilgrims’ footsteps

Aubrac is a place of transhumance and summer pastures, and cows aren’t the only ones who are just passing through: pilgrims can be seen making their way through the flocks to far-off Santiago de Compostela. In the early morning, the little village of Aubrac suddenly looms out of the fog like a fortress in the heart of the moors. Towards the end of the 19th century, Aubrac, at an altitude of 1307 meters, was popular with Parisians, who came to treat their ills with milk and mountain air. Nowadays, of the six hotels and vast sanatorium only one hotel remains - and one restaurant: Chez Germaine, serving slices of fouace whose size is matched only by their delicious flavor…
